One option for you, which other projects have done in the past, is
to introduce GeoGig into OSGeo-Live over 2 build release cycles.
What we do is include your project in the release, but don't make it
publicly visible. So it is ok for docs not to be complete, but you
will be able to use the OSGeoLive VM at workshops and the like at
conferences like FOSS4G.
However, the first thing to do is to submit an application email: https://wiki.osgeo.org/wiki/Live_GIS_Disc#How_to_add_a_project_to_OSGeoLive
Hopefully this should not be too much effort, and will give you the
go-ahead to target OSGeo-Live (or identify areas which need to be
more mature before joining OSGeo-Live).

Honestly I would love to screw geogig in there
but am not sure we can take the overhead given the current
work load. Like in if we had a couple more months we'd be in
a better position to put something closer to a production
build. But in any case let me ask the resource gods and come
back to you with a definitive answer asap.
I think I would be more interested if
the qgis-geogig plugin could be included.
While GeoGig can be used as a java library,
or via the command line (and we have a tutorial to that effect)
is is much more suitable for OSGeo Live's target
audience when integrated in a normal
desktop GIS experience.

I've been hearing good things about Geogig
from a number of people, as well as
suggestions to see GeoGig on OSGeo-Live.
So I'm reaching out, on behalf of the
OSGeo-Live community. We are kicking off our
next release cycle, and now is the right time
join OSGeo-Live if you are interested (and I
hope you are).
I know at least some of you are familiar with
the process. (Hello Jody, who wrote one of the
exemplar reference documents)
