Unfortunately the standard replay to the udig users mailing list is to the sender and not to the list... even if I feel it should be the right that, I don't like to it, because I have to check every... :)

So the answer is the following:

you are right there is any walktrough for JGrass right now, but there are some instruction to get start with JGrass on the website:

here you can find some documentation you probably need to understand how JGrass works, since you come from an ESRI world. The importing session is the last part of the chapter...

Once you've created a workspace and imported your map then you can do anything you need on the dtm and you can find also more advanced instructions on the JGrass related presentations:
