I'm not sure that the 64 bit installation contains also the java
installation. In the installation folder there should be a "jre"
folder together with the plugins folder anf features folder etc. If it
doesn't, you should put together one yourself with jai and everything
needed.
If you don't know how to do that, I am sure I put one inside the
JGrass 64bit install with all the jai stuff in.
Download JGrass  here
http://dev.fsc.bz.it/download/get_file.php?id=284
then extact the thing and copy the jre folder you find inside it over
to your udig folder.
