Yeah, There is a bit of an issue deciding if it is a bug with Geoserver or if they are simply being too strict. Basically only the geometry is being specified and nulls are send for the other attributes. The parse throws a nullpointer exception when trying to parse the non-geometry attributes.

It is possible to edit features but not create new features. For now you must use Geoserver 1.5.4 if you need to create new features through Geoserver.

The next release of Geoserver should have postgis editing fixed.

Remember if you are using Geoserver to edit a postgis, consider directly editing the postgis. uDig has always had been able to directly edit postgis tables.
