An interesting proposal for sure. I am responsible for the EMFT Texo project (http://wiki.eclipse.org/Texo). This project focuses on EMF technology in web service/server environments. The current solution supports true-pojo/ORM generation and out-of-the-box model based JSON/XML web services. So mainly the server side of a web solution. The next step I want to take in this project is to support the user interface side also.
One remaining/future topic is to support a HTML5/_javascript_/GWT user interface to maintain and edit model data. This user interface can be generic and render itself on the basis of model@runtime information, or it can be generated (or a combination of both). Especially a generic model editor for mobile environments can be interesting to develop. There are different technology choices possible or it can make sense to even support multiple technologies.

Let me know if this type of topic is interesting for your students, so web/mobile technology combined with EMF/ecore at runtime. If so then we can connect and discuss the details.
