Once the repo is migrated I will experiment with the GitHub wiki so we can see how it behaves. Once we know that we will be in a better place to decide if it fits our needs.

Sure, but the point with wikis is ease of use, you read a page, decide to contribute, hit the edit button and you're done.

If GitHub wiki allows such easy edits, it should be fine.
