Because there are many specific gdb modifications/patches which were made for the old versions. Their upgrade is sometimes not a trivial task which somebody must do and this "somebody" is still looked for...:-)) For example, I use gdb with BDM interface to the MPC860 CPU, it exist for 5.3 but not higher. And it works fine!

Why haven't these patches made into the official gdb releases? Are they too specific to what you're doing?
