Can you try and reproduce this issue with one of the sample data sets provided for uDig walkthrough 1? I am worried that your sample shapefile is somehow invalid and is breaking the geotools code. Note that uDig 1.1 and uDig 1.2 have different implementations of shapefile so that it is interesting that both are failing... (You did check uDig 1.2 did you not?)
