Your description is interesting; is the geowebcache available for me to try out?
Can you try something for me? Use the geoserver-wms as your starting
layer (so that udig is using the correct projection for your map) and
then add the geowebcache layer?
If that works then we have a problem with uDig choosing a good default
map crs based on your tileset description.
