Hi Tom:

The WMS servers are providing you a picture of the data; not the raw
data that would allow you to work with the information offline using
only your computer. Why not check if they have a WFS service? The
Walkthrough 2 tutorial documents how to export a shapefile from a WFS
service on the web.
