Hi Jody,

uDig on a server? Please explain me how and if is it possible.

But the point is, you can use GISVM Server with your current uDIG desktop install.
So uDig users can access to their personal PostGIS databases, WFS-T services, WMS, etc. having a complete GIS (virtual) server running in background on their Workstation (or anywhere on their local network)

PS.
uDIG is already present on the GISVM (Desktop) edition.
And it will be present on it's update, to be released during August. ;-)
