Hi Sebastian,
you can use JGrass extension to manage raster data in uDig. In JGrass it is possible also to edit a raster data, like here:

I know that is not possible to load a file with extension .asc, but maybe someone could do some kind of convertor or something like that. I am using Geoserver as server, if this help in something.
