Andrea suggested me the right way to solve the problem of proxy 
connection with uDig.
uDig must be started with the following parameter:

udig.exe -vmargs -Dhttp.proxyHost=[proxyname] -Dhttp.proxyPort=[proxyport]

I hope it could be useful for someone.
