Your question could also be taken to ask about support for the OGC
sensor based service specifications - a set of protocols that has not
been adopted broadly yet and are thus not supported by uDig. If you are
interested in this direction I can provide you with recommendations in
this field.
As an example of a "real time gis" done with uDig please review the
following OGC presentation; that made use of uDig as a client for a "geo
video service".
