we are doing it this together with Prof. Rigon from the Environmental
Engineering department of Trento (http://www.ing.unitn.it/dica/eng/).

We are using it for hydrology and geomorphology, i.e. almost only big
nice rasters, which leads to high ram, to do good calculations at
least 1 GB. But the dataindependent udig should work well also with
256 or so. Right now I can't find the min requirements on the udig
site.

What do you mean exactly?

Never had problem with that. In prior versions there were some editing
troubles, but the last releasecandidates are nice to use.

I think it really depends on what you need to do.
We are installing JGrass-udig on every pc itself and not centralized,
so I can;t tell you if and how that is ok. BTW, since it doesn't need
to be installed with admin rights, it is the less bureaucratic way to
go :)
