Check your udig directory; if a jre folder exists then it will be used. 
Perhaps Jesse is bundling a java 6.

One more question for you; can you do a describe table ... I am 
wondering the attribute names have something that we
are not expressing as valid XML. You could also check the properties on 
your layer and see what it says for attribute names.
