Yeah.  I just figured this out.  It's fixed in the code base now...

   (3) when I attempt to download the SDK, the download name indicates the
        image is for Windows. Is there a SDK version for Linux?


Hmmm.  That is a bug in the download script.  Go to udig.refractions.net/downloads/udig-1.1-RC12.linux.gtk.x86.zip

   (4) does anyone know if there are any plugins related to Sonar imaging?

Not that I've heard of... Mind you I don't know what that is.
