 We are currently moving a branch of uDig to use Geotools trunk which has a 
wicked implementation of Geotiff.  It can render GB+ sized Geotiffs very 
efficiently as long as the overviews are generated.  I also think there is 
some JPEG2000 support somewhere on trunk.  However it will be a little 
while before it is completely stable.  But if you have the patience, 
helping us test it would really be great.   You've been a great help already.  I'll let you know when a Milestone 
from the branch comes out.
