For the Confluent KDS, there may be some cases where it would be useful to override the schema used to create the SFT, e.g. if you have an existing topic that has a schema without the geomesa avro field properties.
Add a configuration parameter to the Confluent KDS that accepts a map of topic names to schema overrides. Before an SFT is created for a new topic, this config should be checked to see if it contains an override for the given topic, in which case the override schema should be used, else convert the schema normally.
