If you can download the sample data set used in the uDig Walkthrough 1 you will see a clouds.jpg file I use for testing. Now uDig 1.1.0 is limited in the size of image it can load; if you are working with really large images I recommend joining the developer list and learning how to build a copy of uDig 1.2.

I hope that we will have an example 1.2.x for people to try out for the FOSS4G show in september; but everyone with spare time is currently working on getting uDig 1.1.0 out the door.
