Is there anyway you can share your dataset with me?  I have tested this 
with a fairly large raster and did not see this error.

Regarding the 256 thing - that is the maximum number of entries the 
geotools styling engine will support.  If you add more it doesn't style 
anything.

I will look at this.

This is intended.  The "Values to Ignore" are values that are ignored 
when computing intervals.  Technically they don't have to be no data values.
