I've had this problem on each version of uDig I've tried. I can't save a uDIG project. I can create one and import shapefiles. I can create maps, etc. I just cannot save a project. The "save" and "Save As" menu items are grayed out, inactive and unresponsive. This is a problem for 1.0.3. The JIRA pulldown memus don't have that option yet.
