Yes. You can define multiple edgeData / laneData defintions with different values for attribute 'vTypes' to generatd statistics for the chosen types.

If you simulation writes tripinfo-output, you can use this tool to obtain counts and other statistics by type: https://sumo.dlr.de/docs/Tools/Output.html#tripinfobytypepy

I have multiple vehicle types in my config file, I want to know at the end of simulation if the number of vehicles inserted run into simulation, is there any output command which gives vehicle counts along with vehicle types.
