Yes. --tripinfo-output will list vehrouteNo (number of reroutes) and --vehroute-output will list all routes that were used during the simulation by each vehicle along with the reason for rerouting and the expected savings.

Is it possible to know how many times a vehicle changed its route? Is there any function that I can use to count route changes during a simulation?

With period 300, a driver will check every 5 minutes whether a faster route is available and in that case switch to the faster route.

I need to understand what the routing period exactly means because I have some doubts. In the following documentation https://sumo.dlr.de/docs/Demand/Automatic_Routing.html
It is indicated as the period with which the vehicle shall be rerouted. 
Setting  routing period to 5 min. Is this means that routing will happen every 5 min even if a new fastest route is found before this period? Or, this period allows a driver to take a route already found after 5 min ?
