Currently there is no way to do this. The "container check box" used by the UI interprets selection of a container parent as selection of all children.
However in your screenshot, the "Show only the latest versions..." checkbox is unchecked. The default state of this checkbox is checked, so by default your users would never be presented with multiple versions as shown in the snapshot, unless they explicitly changed this value.

I'm working on proposals for revamping EclipseLink's update sites, and
have been playing with using composite repositories to allow the
creation of a single site for the download of any published version. A
single composite site would ease maintenance, and make it easier for
users to find software. However, since it appears that an entire
category can be selected (in either the "install software" or "add
content" dialogs in Eclipse), so a user can inadvertently select *all*
versions for install. I've attached an image that illustrates the issue
- notice the check-box next to the category.
Is there any way to generate a "non-selectable" category? or to render a
category "non-selectable", and force explicit selection of the items in
the category instead?
