I should have thought of Google. It's been a busy couple of weeks.
I'm more curious about the second part of my question. What does a
UML2 Profile look like? Is it just an ecore file, or is there more
to it?

Wayne,
I know all there is a lot of modeling terminology (jargon you
might say) but a simple Google search would answer your question.

I'm sure that anyone with even a rudimentary understanding of UML
would understand what a profile is, so I'm not sure if your
question aims at suggesting that this term should be defined in
order to be used...

The Modeling project would like to propose
creation of a new "UML2 Profiles" subproject of MDT. The
proposed project is about providing implementations of
"standard" UML profiles and a repository in/from which to
discover/install them.
