This is really a Maven question, not a Maven on Eclipse (M2E) question, and probably better asked on users@xxxxxxxxxxxxxxxx

However, the reason is simply that Maven defaults to JDK 1.5. To change it, you'll want something like the following in your pom.xml ...

<build>
    <plugins>
        <plugin>
            <groupId>org.apache.maven.plugins</groupId>
            <artifactId>maven-compiler-plugin</artifactId>
            <version>3.1</version>
            <configuration>
                <source>1.6</source>
                <target>1.6</target>
            </configuration>
        </plugin>
    </plugins>
</build>

which configures the compiler plugin to use JDK 1.6
