The User Guide documents the annotations here,

But does not currently document the XML, please log a doc bug for this.

For the most part the XML mirrors the annotations, the same as JPA.

The schema for the eclipselink orm extensions is in the eclipselink.jar in
the xsd directory (eclipselink_orm_1_1.xsd).  It should also be on the
website somewhere, but I can't seem to find it either.  Please log a bug for
this as well, as either it isn't on the site, or it needs to be better
linked from the doc and wiki.
