See for the details on Java versions on OS X.

Java 1.5 is standard on all OS X systems since 10.4, and is the default for most of them.

So there is a "Java Update" for Intel machines running OS X 10.5.something that adds Java 1.6 to their machine. Then the customer needs to set it as the default using /Applications/Utilities/Java

So, it is there, kind of.

It is sufficiently awkward that we've been unable to persuade
customers to use 1.6 on OS X.  There's also a decent amount of 10.4
deployment still.

We've even considered distributing a non-system JVM for this
purpose... but so far, we've stuck with Java 1.5.
