I know there's an entry in the Eclipse FAQ for this, but I don't have
the URL handy...

Install 3.0 into a directory separate from your 2.1 install.
Backup your workspace (in case you ever want to go back to 2.1).
Start 3.0, pointing it to your workspace directory (using -data param to
eclipse.exe)
It should recognize all your Projects in the workspace.
