When configuring the Launching tab in the .product file, which bmp file is
the one associated with the rcp execuatble (ie. the one that shows in the
desktop shortcut in details view, the smallest icon)?

It depends on the size of the icon, however, you specify the launcher icons on the Launcher tab under Program Launcher (also where you provide a name). The icons used will vary for each system, so be sure to list icons for all the platforms your application will run on and the icon is the appropriate file type.
