Hi,
I'm new to PDE and gemini, but I'm very familiar with spring framework.

I was trying to set install gemini blueprint into eclipse for plugin developement.

But I'm a bit lost to where and how to start.

first where do I get the implementation, I have found this download page with a 2.0 release:
build.eclipse.org/rt/virgo/maven/bundles/release/org/eclipse/gemini/web/

I also downloaded the latest release but that's version 1.0 from the apparently official Gemini Blueprint site
www.eclipse.org/gemini/blueprint/download/

Which one should I use?

build.eclipse.org/rt/virgo/maven/bundles/release/org/eclipse/gemini/web/ contains the Gemini Web bundles which you shouldn't confused with Gemini Blueprint at www.eclipse.org/gemini/blueprint/download/.
