I want to be able to trigger some actions via double-clicks onto diagram
elements. Furthermore I would like to attach context-menus to diagram
elements. And maybe also define a toolbar.

I would assume that one can define such things in the .gmftools-file? Is
there some example or description for this? All programs and examples I
have seen so far just defined palette entries and no more...

You can add context-menus via ordinary org.eclipse.ui.popupMenus
extension point.

Part 3 of the GMF Tutorial discusses adding context-menus to diagram
elements. Have a look at Section 4: Custom Actions
