Hello,

I need to create adapters/observers for pre-existing custom projects when
the workspace is being loading, or at least before the user can edit
anything. Is there a way to create adapters upon/during loading of the
workspace projects?

It sounds like you'd need to listen to the workspace. There are some Eclipse
tutorials on the subject of workspace listeners, but I don't remember where I
found them. (The generated editors have a small incomplete example of a
listener, but is nothing in EMF that automates your more general problem...
