During installation I have selected a specific eclipse version. I rather wanted "Latest Release". Is there a way to change that after the fact, so that I could enjoy 2020-06 without a complete reinstall?

Use Navigate -> Open Setup -> Installation, double click the root "Installation" instance to open the Properties view, and the change the Product Version property; you can type here to filter to matching prefixes.
