how could I set new icon on any program that I set the eclipse to open it by default?
I mean when I right clicked on a file and in the properties > open with> I set the eclipse .
then the file will have an Icon that its lock like eclipse one. and I want to change that icon. also if its possible change the eclipse icon itself.

This sounds more like an operating system-specific question. I'm guessing your own Windows. The icon you see is the icon embedded in the eclipse.exe itself and I don't think there is a way to change that. You should ask about this on some Windows forum (if Google doesn't find answers).
