Is there a way to enable the logging of eclipse platform jobs?

Yes. There is a tracing option for jobs.

The tracing options for jobs (also visible via UI)

Ah, this only seems to be available when PDE is installed! Got it! Still useful, but would be even better if PDE wasn't required.
