I've found a solution that works for me. I'm deploying the CXF servlet in my own bundle. I'll make a maven project for this that can be added to the samples if so desired.

Here is a set of projects that contain a recipe for implementing JAX-RS support in OSGi.

I have separated the interface from the implementation, which uses Apache CXF, to allow for other API tool kits to be used.

I hope that this is useful and please feel free to integrate it in to the sample recipes. I've already named the projects as such and it is released under the EPL 1.0.
