I'm uncertain, but I think there's a special forum on Eclipse for Java
FX. Ask the first part of your question there.
For the second half...
You risk nothing by upgrading to Java 8, however, my advice is that you
download, to a path like /home/odile/dev/jdk1.8.0, the JDK you want to
use with Eclipse. Leave your the JRE your host depends on alone and let
it continue to update independently as Canonical updates it.
Tell Eclipse, via Window -> Preferences where to find your private JDK.
That way, you're never in doubt as to where you're getting your
development JDK from.
