Hi,
Your mew Mac will have already Apache installed by default.
To enable it, go to:
System Preferences > Sharing (under "Internet & Network")
Then enable "Web Sharing"

This will switch Apache on.

I've not yet played with tomcat on my Mac, but was planning to do so over the next littel while.
My starting point was going to be:
http://developer.apple.com/internet/java/tomcat1.html

Hope that helps.
Do come back and let us know how it goes though. As I'll soon be travelling the same road, keen to hear how you go.

Mookle
