Check out http://www.vogella.de/articles/Eclipse/article.html by Lars
Vogel. He answers a lot of questions around here and is very knowledgeable.
It's not video but has plenty of screen shots.

Also, have you seen the tutorials that are included in the Eclipse Help?
Open the Help Contents and browse for "Java development user guide" >
"Getting Started." (it is also available online at http://help.eclipse.org)
