I've seen something similar in an Actuate demo, but haven't been able to
see any way of setting up something similar on my own.

Brad,

If you just want to turn columns on or off look at using the visibility
property. Possibly tie it to a report parameter.
If you want to dynamically add columns take a look at this blog entry.
