can you please elaborate a bit more on this topic? I read somewhere in
eclipse 3.1. manifest files are preferred over plugin.xml files. But when
creating an example plugin with a manifest file a plugin.xml is also
created containing all extension definitions. So you need at least the
plugin.xml!? It is also said that there is a connection between specifying
a jar instead of "." as runtime and plugin deployment in jar or directory
format. Which scheme is working for you?

What exactly do you mean by "deploy a jar'ed plugin as a directory"?
Extracting the jar and place it in the plugin directory? And what is the
difference in plugin.xml and manifest if you do so?

There is a lot of rumor in the air about this topic and I do not know what
to belief as nothing I try is working.

A plugin.xml is only created if you create any extensions.
i.e., it is possible to create a plugin without a plugin.xml.
(caveat- the above only applies if you are using OSGI manifests. If you are
creating 2.x style plugins, the plugin.xml is always created).

Both schemes work. You just have to configure the manifest/plugin.xml
properly.
