When I right click on the "server" pane on an existing server listed there
then there is a context menu"Add and remove projects".

When do I have to a project to a server?

Is it only when I want AUTOMATICALLY to deploy something to a server?

Correct. If you have no need for that capability then you don't need to
add projects (in fact, if you're not leveraging that feature then I'm
not sure why you'd need to define servers at all).
