I'm trying to configure my barmenu in my perpsective, removing some menus.
The problem is that certain menus like search, launch... don't want to be
removed.
Indeed they are added after the layout has been created, and my
perspective isn't able to do what i want to do...please help me.

You have limited control over the menubar from within a perspective. If
you were writing your own Eclipse RCP application, you would have
complete control, but a humble plugin does not have this flexibility.
The end-user can remove most menu and toolbar entries using Window >
Customize Perspective.
