Which is the prefered and easier way to debug a plug-in. Currenly I always
have to build the project than export to jar, close eclipse and start it
again to see what happens.

Try importing plugins using the "External Plug-ins and Fragments" import
method. Select all of the plugins when you do. Then you can launch
your plugin with the Run-time Workbench launcher. This is _much_ faster
than exporting to a jar. :)

Look up in the help, PDE Plugin Developement Environment. This is
exactly for what you are doing.
