But should I checkout every possible entry present in the "plugins" and
"features" dir?

And I saw there are some tests present in the repository (e.g.
org.eclipse.core.tests.resources),
how should I use them to make sure my version is working correctly?

You can select more 'simple and reliable' distros:
- Stable builds
- Release builds
- Night builds

PS. If you want to *compile and make working latest Eclipse sources*,
please join to Eclipse developers team.
