Is there any information about the "BeanInfo Path" settings of a project
and how the "Flexible Java Projects" work?

Beaninfo path is contributed through the Visual Editor. Look in the help
under the visual editor, and do a search on BeanInfol

I don't know what flexible java projects are.

When you create a Project, you may choose the "Flexible Java Project"
wizard...

That must come from a contributed plugin because I don't see it on my
standard Eclipse 3.1M7, unless it was added with 3.1RC1. You need to go
to whoever contributed it to get info on it.
