If you want to have Eclipse itself run in a particular JVM, you need to
specify it either on the command line or in a eclipse.ini file.
This question is asked/answered a lot so just search the newsgroup
archives and/or Google.
If you only want o run your programs from in Eclipse with a different
JDK/JVM, you can add it via Preferences > Java > Installed JREs
