Let's assume for the sake of argument you want to use one of the
"out-of-the-box" date formats. In this example, we'll use Short Date since
it's close to your requested format - 1/1/2006.

Right-click your parameter, and then left-click Edit. Set your default
value to 1/1/2006 (or whatever). Then, believe it or not, you're going to
use the Display As fieldset and click the Change button after "Format string
as:". Select the Short Date format (which today would be 6/20/06), and
click OK. Click OK again.

You could also select a Custom Date format, but the above should get you
started.
